<p>Just as Guilin Mifen had restorative properties for those soldiers suffering tummy upsets,I hope there is some historic Chinese dish that will alleviate the menu stealers major 头疼 and bring him back to his senses.Nurse,nurse !</p>

<p>aside from hotpot, perhaps the most popular dish in sichuan is 回锅肉hui2guo1rou4, twice cooked pork.</p>
<p>this dish is best avoided by cardiovascular challenged culinary adventurers. the main ingredients being fragments of pork meat 瘦肉 attached to chunks of pork fat 肥肉 accompanied by spring onions 小葱 and blackbeans 豆丝 with garlic 大蒜 and a generous amount of chilli 辣椒, all soaked in a swimming pool of vegetable oil 植物油, yummy.</p>
