If I wanted to say, "When I was making a u-turn on my motorbike, I pumped the gas too much by accident， lost control of the bike and fell off it" would this be a good way to say it in chinese "我在摩托车上掉个头的时候无意中开得太快和失控了摩托车然后摔跤了。

I don't really know enough to answer the entire question. But I see on Yellowbridge that there are two words for 'step on the gas': 加大油门 and 开大油门. Interestingly, the first one can be shortened to 加油, which of course we already know in other contexts.
