In my dictionary, it says Sabbatic=Sabbatical which means 安息日的 adj.
sabbatical:休假的 adj,
较长的假,休假 n.
Sabbatism: 严守安息日n.
Sabbatarianism: 严守星期日为安息日,守安息日(星期六)n. I am a Chinese, but i do not use this word so often, because it is kind a word for religion. For me, I think it is a holiday like Saturday or Sunday.

安息日的 is often used in Christian/Jewish settings for the Sabbath or referring to the Sabbath.

Dict.cn gave me
安息日的
and from the respective Google hits it might fit, but I am also not certain.

TOUGH TO GO - wow, that was not easy, only Google gave back a translation for sabbatical directly. I would defer to a native Chinese speaker for the proper word.
I'm not sure that xiu jia has the clearest connotation for sabbatical which means extended leave, and usually not for a vacation-like purpose.
休假 xiu jia, vacation, leave of absence

Google translate isn't on target, that engine gives 休假. I've recently come across this word in conversation but I can't come up with the words....休假 does come up as leave of absence in some engines.
dict.cn come up with 公休假 for sabbatical leave.
You need Cpod's word for this.

If the leave of absense is for further education, you could say:
去进修 (qù jìnxiū)
