Hinton spent the late 40s/early 50s in 'liberated areas' in N China, as an American tagging along with Communist work groups who were supervising land redistribution. His book is a graphic but often entertaining account. It testifies to the ever-present fear of hunger in the old rural life, and the extraordinary (sometimes horrible) things people would do to avoid starvation.

Relatedly, I recently read William Hinton's book 'Fanshen' (i.e. 翻身), on village land reform in the late 40's/early 50's. The sentiments expressed in the poem were certainly alive and well then.

ps The South China Morning Post down here has been cheekily claiming that Mao never said 'the Chinese people have stood up' anyway, so what was all the fuss about.
