Thanks verazhang, and everyone, for the replies! Is any explanation given for why 月 is chosen to represent 肉 in these cases?

At the very beginning, Chinese character is pictographic character. If you search Google image, the orignal pictographic character of 月, it's almost same as 肉. That's why it is chosen to represent 肉。
