Gets confusing !

Sure admittedly I'm a little impusive and a little ignorant as well, and I've possibly got a little bit ahead of myself! I'm also somewhat guilty of not fully assessing everything properly before delving into this learning program. Mind you I'm trying very hard right now! der yeah!
But all that aside I got annoyed after downloading a few of the learning titles to find the guys (David, John, and Danny, Title :"Food flavours Shanghai style") talking about Shanghai Chinese (simplified Chinese) in one breath, then adding the variation in the Mandarin dialect.
Maybe I'm dumb !! But I didn't see any references !! IE: simplified Chinese, Mandarin, Cantonese anywhere on the Title????????????? Or do we all just assume this program is a mixture of "simplified Chinese", and Mandarin??? Or do the words "Shanghai style" suggest a change in the dialect! Very Confusing!!Or have I missed something else entirely ??
My point is this! Spare me please I'm just a novice, I don't need the added confusion, just one Language at a time will do quite nicely. And please tell me what it is before I start????
And please, for the sake of everyone elses sanity, please clearly stipulate the Dialect, or mixture, in the introduction. So that everyone knows exactly where they are. After all in case nobody else has noticed! We are,(I definately am)ignorant novices trying hard to learn !! Dui bu qi,wo zhi hui jiang yi dian zhong wen.

You'll notice at the top that it says "Shanghainese" - not sure how you managed to stumble into that lesson channel! It's a dialogue channel to teach Shanghainese.
