When someone says “免贵姓【...】，不用客气...” what would you say if you DID want to (or were required to) honor their surname? Basically, what does honoring someone’s surname mean beyond calling them by it?

我是动物护理员-我给动物治病, 我教学生关于野生动物的知识 !????????. (I’m a wildlife rehabilitator and I also do live wild animal programs for the public to teach them about wildlife. What I do doesn’t often appear on many vocab lists so learning to describe this has been quite a task!)
