I believe 的士came to Mandarin via the Cantonese for "taxi", which is pronounced dik-see in Cantonese. 的 in this case is used for its sound, not its usual grammatical function. Same for 士。 For example, 巴士 (ba-see) for bus. 林历山 They explain this in the audio.
