Since it's also now the Muslim month of fasting, how about a lesson on Ramadan?  The Chinese translation for Ramadan, 齋月is interesting since zhai1 refers to Buddhist types of fasts.  Also the word for mosque, 清真寺 has an interesting etymology.

I came back last month from a trip to Beijing, Xi'an, etc. and you can find some beautiful Chinese style mosques and old Muslim quarters in many places
