May 27, 2009 at 7:00 AMYou forgot one of the best Xinjiang dishes (I lived there for 19 months and tried a lot of the food, and I always came back to this one):
拌面 bànmiàn ( in uyghur: "lachman")
Cold noodles with lamb and peppers in a tomato sauce (not all that different from 丁丁炒面, but usually somewhat less greasy)
Another popular dish with the locals in Xinjiang:
抓饭 zhuāfàn (or in uyghur: "polo")
Rice and carrots fried in lamb's fat and usually with a big chunk of fatty mutton on top.
@shenyajin: in my experience, if you buy 馕 hot from the oven it has a wonderful texture (better than much Western-style bread) and is very easy to chew, but after a few hours it is exactly as you describe it. After a few days, it is so hard that you can use it as a hammer.

May 27, 2009 at 8:41 AM@shenyajin: I've never actually seen anybody use their hands to eat 手抓饭, it was always spoons when I was around. Then again I spent 95 percent of the time in Urumqi, maybe in southern Xinjiang customs are different...
