I've had drunken shrimp in Taichung, Taiwan while accompanying my husband on a business trip. The host pulled my husband aside and asked if I would prefer my drunken shrimp cooked. When the dish arrived at the table, the glass covered was removed and a match touched off the alcohol. After a few seconds, the cover was placed back on the dish. It sounded like popcorn popping! They were good.
