Yes, the way you say "认识你很高兴" is good. Or you can also say "很高兴认识你"。

我是做飞机。 Is this correct?

I went to a chinese resaurant this week and ordered my dishes using yi1ge. Should I have used yi1fen4? That is, I said:
我要一个麻婆豆腐 , 一个......
Should I have said:
我要一分麻婆豆腐, 一分。。。。?
or are both correct?

It would be perfect if you can do it 8:15am or 9am every Thursday.

The best time (by far) for me is Sunday afternoon Los Angeles time (early Monday morning Shanghai time). I travel on business monday-friday of almost every week so my schedule then is 乱七八糟 !!

Would that work for you? We could also try a 20 min call every two weeks if that would be easier for you.
