I think the majority of the spice in Sichuan/Hunan food comes from three types of peppers. (p.s. this only comes from my experience eating at sichuan/hunan restaurants in Shanghai)

Dry red peppers

and fresh red/green peppers

My Hunan friends would always use this type of 辣酱 làjiàng (spicy sauce)when cooking at home.

I normally see a small jar of crushed red pepper in oil on the tables at all the places that serve noodles/dumplings/wontons. Besides that, I know there's something called 辣豆瓣酱 làdòubànjiàng (chili bean paste) that's one of the main ingredients in the delicious 鱼香茄子 yúxiāngqiézi (fish fragrant eggplant). And though I have forgotten the name of it, there's a really cool spice that's commonly in 麻婆豆腐 mápódòufu. It makes your mouth numb.

Growing up, I was never a huge fan of spicy food. That all changed when I had a visit to Hunan. After that, I was hooked.

If you like the flavor of spicy food but don't want the chef to overdo it, you can ask for them to cook it 微辣 wēilà (mild).
