我很喜欢坐过山车。 I like to ride roller coasters. Here 喜欢 is a verb. 坐过山车 is a object.
'我很喜欢坐的过山车'is not a sentence at all. It's 'the roller coaster which I like to ride'. So the original sentence should be: The roller coaster which I like to ride is very exciting.
The function of 的 here is to be used before a noun. And before the 的 you can put any part you want to modify or decribe the noun. It could be an adj or a sentence. More example:
我喜欢他 I like him.
我喜欢的他 The person that I like
Does it make sense?
