In the dialogue I hear dei pronounced more like dai. Perhaps I missed it because of the speed.

(Although it seems that it is a word whose pronunciation might  vary somewhat.)

I think "should" can also range from suggestive to imperative, based on the context.

In the dialogue

年初的时候，我们总是要定计划

is translated as

"At the beginning of the year, I always make some plans."  (should be We, of course)

but does the 要 bring the sense of should or must?

e.g. we should always makes plans.

I am trying to understand this sentence:

水怪只是个科学现象，一点儿也不神秘。

I might suggest instead  ...是个自然现象 (a natural phenomenon)

And I don't know what a 水怪 is.

This then seems like a good sentence:

闪电只是个自然现象，一点儿也不神秘。

I think all are proper translations. I think the issue is that the sentence structure between this sentence

你这么快，太危险了！

and an equivalent English sentence would be quite different. I think a good translation would be:

It's dangerous to go so fast!

(or that  fast)
