Yes, 黄牛 (huángniú) originates with Shanghainese, however it's become quite commonly used in other areas of China as well.

In this sentence structure, the (在)(zài) is optional, and can be omitted.

You would say:
我不太好。
(Wǒ bùtài hǎo.)
我不是很好。
(Wǒ bù shì hěn hǎo.)

自己 (zìjǐ) means one's self, as in:
你自己做。(Nǐ zìjǐ zuò.) Do it yourself.

Because Chinese people's hair is so dark, lowlights are unheard of here. However, you can just explain to them what you want, as in:
我要挑染。(Wǒ yào tiāo rǎn.) I want highlights.
Then explain what type of color:
颜色浅一点。(Yánsè qiǎn yīdiǎn.) Lighter colored.
颜色深一点。(Yánsè shēn yīdiǎn.) Darker colored.
warm tones: 暖色调 (Nuǎnsèdiào)
cool tones: 冷色调 (Lěngsè diào)

(Yǒurén men) is not used.
