"对于" is often used for the object of an action, since the character 对 connotes "to, for, against, toward".
对于这个问题,我们很感兴趣。
We are interested in this problem.
对于这个问题,我们应该采取行动。
We have to take an action against this problem.
Sometimes they are interchangeable. Don't ask me why.
关于(对于)这个建议,我们都很赞成。
We all favor the proposal.

Incidentally, is the same true for the English word "rest"? Does this sometimes mean "sleep" depending on the situation?

I'm not so sure, but I feel that the most frequently used usage of “早点休息吧” in China is "go to bed early", but not "rest early". You can go to bed anytime at will at home, but usually can't freely/early take a rest at the workplace, hehe.

I understand well what you want to say. After all, "sleep" is only shown as the second definition of “休息”, but not as the first one, in 《现代汉语词典》. The first definition is of course "rest". That said, I think it's very important for learners to know that the meaning of “早点休息吧” is very situational and highly depends on the situation and context. I guess that "休息" is probably most often used in the sense of "rest" at the office, but not at home. Sorry for nitpicking, hehe.
