Yes, you can use 老先生 (lǎo xiānsheng) for a middle aged man addressing an older man of 80 or so. In the north, they rather prefer 大爷 (dàye) which is a respectful way of address for an elderly man. One can also use 老人家 (lǎorénjia), which sounds like your talking to a group of people, but I can assure you it doesn't. now go out there and talk to some old people...
